So the very first recipe I decided to try from the new cookbooks is from The Steamy Kitchen cookbook; Pork & Mango Potstickers. I've never attempted potstickers or anything like them because they seem pretty involved. Jaden's recipe, tips, and photos really helped and made the assembly a breeze.
I started by getting all the filling ingredients ready, then I was ready to go. I began filling and pinching the little guys together at 6:15 and by 7:00 I had completed 60 of them! I did have a little less than 1/2 a cup of filling left over. I'm not sure if I didn't fill them quite enough, or if my package of wrappers wasn't right but I wanted to be sure I didn't overfill them. Potstickers spewing their insides out just wouldn't be pretty (but I'm sure they would still taste good!).
Pretty simple ingredients. The only things I didn't have already were the mango and the pork. Got lucky with the pork and got it on sale, and saved the other half of the package for another batch.
Here they are all lined up. Well, this really isn't ALL of them. I kept some out to cook for dinner, and put these in the freezer. Now I have a bunch of individually frozen little dudes just waiting to be cooked!
I realize the photo isn't focused on the main subject, but that's just how it worked out, and since we ate them right away I don't have a better photo. Isn't it cute how they stand up like little crabs? Ooooooh, now there's an idea - potstickers with crab in them. Oh man that would be good. I also thought I'd try them with salmon sometime. Wonder what else I would put in the filling if I made them with crab? Any suggestions? Oh, and I forgot to mention, these are really really tasty! I highly recommend you try them.
