This weekend I didn't have much time to figure out this week's menu. We did spend some time with our "little" Noah (we mentor through Big Brothers Big Sisters) doing science experiments & playing guitar. Dave and I also carved a couple of pumpkins.
I guess it's on to the menu plan. I'm still planning, and working through my grocery list but I'm running out of day and need to get a move on.
Next Friday we receive our first box of veggies & fruit from Full Circle Farm, so I'm going to find recipes to use up the box contents for next week. I'm looking forward to it!
Monday: leftovers of Chicken Casserole Supreme (no Meatless Monday today since we have leftovers and I've got a quilt class tonight which leaves no time to cook)
Tuesday: I was considering Tofu Tuesday, but didn't come up with anything, so I'm going to try last week's Thanksgiving in a Pot since I was able to find a turkey breast.
Wednesday: (Meatless) Fried Rice with veggies
Thursday: probably out - we're going to see Seth Meyers of SNL fame!
Friday: Chili & Cornbread
Saturday: TBD
Sunday: leftovers or pizza
--------------
I'd still like to try a couple of these recipes. They haven't happened yet, but there's always a chance, right?!
Roasted Cauliflower with dates & pine nuts,
Chocolate Spiderweb Cookies (Cooking Light)
Fudgy Brownies (Cooking Light) I LOVE LOVE LOVE brownies! I hope these are good!
Pumpkin Butter (Skinny Taste)

Thanksgiving in a Pot sounds delish! I think I'll have to give it a try sometime soon.
